Mango and Dragon Fruit Chia Pudding

This Mango and Dragon fruit Chia Pudding is perfect with alphonso mangoes and pink dragon fruit make with coconut milk. It's a healthy snack, great for meal prep, gluten-free, paleo, & vegan.

Ingredients
  

  • 350 ml milk of choice I use coconut
  • 1 ½ tbsp maple syrup
  • ½ tsp vanilla
  • 65 g chia seeds 6 tbsp
  • 1/2 pink dragon fruit blended
  • 1 large Alfonso mango
  • Vanilla coconut yoghurt

Instructions
 

  • Combine 350 ml milk of choice, 1 ½ tbsp maple syrup, and ½ tsp vanilla in a measuring jug and mix. Add 65 g chia seeds and stir well with a fork. Leave to set for at least four hours ideally overnight, stirring every couple of hours.
  • Peel and roughly chop half of the 1/2 pink dragon fruit, add to a jug, and blend.
  • Mix the pureed dragon fruit with the chia pudding.
  • Peel and roughly dice the 1 large Alfonso mango add to a bowl or jug, and using a hand blender, blitz until smooth
  • Layer dragon fruit chia seed pudding, mango coulis, and Vanilla coconut yoghurt. Top with chopped mango. Enjoy!
