Just look at how bright and colourful it is! Such a great way to start the day with something so beautiful. Pink dragon fruit has such a vibrant pink colour that is all-natural and these Alphonso mangoes are also so beautiful!

This is a breakfast that you can meal prep! Make this on a Sunday night and have it ready to go for your weekday breakfasts. It takes no more than 10-15 minutes to put together, and trust me it doesn’t need to be super fancy! I bought some cute little jars from the dollar store which have an airtight seal which make for an easy prep!

Chia seeds are tiny nutritional powerhouses! They are packed with fiber, omega-3s, protein, antioxidants, and bone-building nutrients, just to name a few. Plus, they keep you feeling fuller for longer.

Ingredient Substitutions

Chia Seeds are needed here so feel free to use the black or white ones, whichever you can get your hands on. They’re pretty readily available.

Alphonso Mangoes are some of the best mangoes in the world (in my humble opinion!) They are creamy, and sweet and have such a vibrant orange-yellow hue! But if they’re not in season, try to use whichever mango is in season. If that’s not an option, get some frozen mango and defrost it fully before blending it.

Pink Dragon fruit may be hard to come by. Try your local Asian supermarket or the “tropical” section of your grocery store. If there is no luck there, you can find Pitaya powder (dried and ground dragon fruit) online. Just add a tablespoon or so to the milk before adding in the chia seeds!

Maple Syrup is my sweetener of choice here. You can omit it if you want depending on how sweet your fruit is. Dragon fruit can be a bit tart so I added some in. Honey or agave are great alternatives if you want.

I used coconut milk in this to keep with the tropical vibes and generally love the flavour. Use whichever milk you prefer to drink.

Mango and Dragon Fruit Chia Pudding

This Mango and Dragon fruit Chia Pudding is perfect with alphonso mangoes and pink dragon fruit make with coconut milk. It's a healthy snack, great for meal prep, gluten-free, paleo, & vegan.

Ingredients
  

  • 350 ml milk of choice I use coconut
  • 1 ½ tbsp maple syrup
  • ½ tsp vanilla
  • 65 g chia seeds 6 tbsp
  • 1/2 pink dragon fruit blended
  • 1 large Alfonso mango
  • Vanilla coconut yoghurt

Instructions
 

  • Combine 350 ml milk of choice, 1 ½ tbsp maple syrup, and ½ tsp vanilla in a measuring jug and mix. Add 65 g chia seeds and stir well with a fork. Leave to set for at least four hours ideally overnight, stirring every couple of hours.
  • Peel and roughly chop half of the 1/2 pink dragon fruit, add to a jug, and blend.
  • Mix the pureed dragon fruit with the chia pudding.
  • Peel and roughly dice the 1 large Alfonso mango add to a bowl or jug, and using a hand blender, blitz until smooth
  • Layer dragon fruit chia seed pudding, mango coulis, and Vanilla coconut yoghurt. Top with chopped mango. Enjoy!
