Lunch Rush 03: Paneer Besan Chillas✨️ recipe below!

Spice up Lunch Rush with these crispy, golden paneer besan chillas! 🌟 Made from besan (gram flour) and packed with spices and herbs, they're a delicious twist on savory pancakes. Perfectly crunchy on the outside, soft and paneer-filled on the inside! ✨

Batter: (this makes 3-4)
70g besan
¼ tsp salt
¼ tsp Kashmiri red chili powder
1 tsp minced ginger
80ml water

Filling:
250g paneer
1 red onion, finely diced
1 green chili, finely chopped
½ tsp cumin seeds
1 tsp ground coriander
1 tsp minced ginger
2 tbsp finely chopped coriander
2 tbsp finely chopped red pepper
½ tsp salt
Yoghurt and chutney to serve

Mix the batter ingredients until smooth.

In a large bowl, crumble in 250g paneer. Add the onion, green chili, cumin seeds, ground coriander, ginger, salt, coriander, and red pepper. Give it a good mix to combine. Taste and season for salt if needed.

Heat a tablespoon of oil in a non-stick pan over medium-high heat. Pour in about ½ cups of batter. Using the flat bottom of a bowl spoon, spread it as thin as possible into a round.

Once the top starts to bubble and looks 80% cooked, add a few tablespoons of the paneer mix on top and spread it out flat with your fingers or a spatula. Drizzle with some oil and flip it over to cook the paneer.

Cook for another 2 minutes, until golden brown.

Serve with yoghurt and chutney of choice.

When I first moved to Singapore, I thought everything was imported. But guess what? We actually have fantastic local products from SG Farmers Market and The Straits Fish. A wide variety of leafy greens, fish, and eggs make eating locally accessible. Look for the "locally grown symbol" and "SG Farmers Market" when shopping to support our local farmers.

Had a great time with SG Food Agency during the Singapore International Agri-Food Week! Chef Alvin Leong's Hokkien Mee with local wheatgrass oil, Vannamei prawns, bean sprouts, and noodles was delicious!

So remember to buy fresh local leafy greens, bean sprouts, fish, and eggs which are all perfect for nutritious meals!
