Have you ever had Chinese Steamed Eggs? The texture is delicate and custard-like! Look at the jiggle 🤩

I used a ratio of 1:2 eggs to warm water and topped with toasted sesame oil, light soy sauce, spring onions, and toasted sesame seeds.

Would be delicious with steamed rice!

Fluffy Banana Pancakes with Brown Butter Maple Syr

Fluffy Banana Pancakes with Brown Butter Maple Syrup 🥞🍌Save the recipe below!

Makes 10 pancakes

BBMaple Syrup:
115g unsalted butter
100ml maple syrup (the real 🇨🇦 stuff only, please)
Pinch of salt

Pancakes:
200ml Milk
1 large egg
½ tsp vanilla
2 tbsp melted butter
2 medium ripe bananas
150g all-purpose flour
2 tbsp milk powder (malted milk powder would be incredible, too)
30g granulated sugar
¾ tsp ground cinnamon
1 ½ tsp baking powder
½ tsp salt
⅛ tsp baking soda

Melt the butter in a pot over medium heat. Cook this mixture constantly stirring until it’s a deep golden brown. Pour in the maple syrup and add a pinch of salt. Keep it warm to serve or store it in a container in the fridge.

Mash the bananas and set aside

Whisk together the milk, egg, butter, and vanilla until smooth. Stir through the mashed bananas

In a separate bowl, whisk together the dry ingredients until combined. Make a well in the centre and pour in the wet ingredients. Whisk until just combined. Some lumps are okay! Set aside for 5 minutes to rest.

Heat a non-stick pan or griddle over medium heat. Pour some oil, then wipe it off with a paper towel. Using a ⅓ cup measuring cup, scoop/ladle the pancake batter onto the pan 2-3 at a time, depending on how big your pan is.

When you start to see some bubbles forming on the top, then popping, flip the pancake over and cook for about 1-2 minutes.

Stack up the pancakes with more sliced bananas and generously drizzle over that warm brown butter maple syrup.

2 tsp coriander powder
1 tsp cumin powder
½ tsp chili powder
400g pork mince (we do lean mince)
1 green chilli slit in half (optional)
200g dried pasta (I use spaghettini)
Coriander, chopped

Pies in New Zealand were on another level!🥧 I couldn't resist them. A shortcrust base with a meaty filling (some with 🧀) topped with buttery flakey puff pastry- what can go wrong? I also love the @masterfoods squeezy ketchup (tomato sauce) packets.

Our firm favourite was the first one, the Pepper Steak we had from the cafe at Milford Sound!

* Milford Sound Cafe - Pepper Steak 10/10
* Fergburger (overhyped) - The Ferg Pie 5/10
* The bakery QT - Pepper Steak 7/10
* Pie Rollas @pierollas - Brisket + jalapeno + cheese & steak + cheese 10/10 ((Much more buttery and flakey all around, super rich)

I had SO many more places to try just not enough time. NZ I will be back for more epic pies. @ashby_pies 👀
